創意年菜!黃金菠菜蛋捲

黃金菠菜蛋捲

山城裡的冬夜籠罩著這個季節獨有的寂寞和蒼涼,少了蟲鳴鳥叫眾聲喧嘩,大地寂靜無聲,唯獨清冷的山風發出咻咻地聲響,將木窗吹得咔啦咔啦響,沉沒在老舊桌燈泛起的光暈裡,一片彷彿進入一個夢境一般的世界,在這裡,心緒總能夠沉靜下來,回憶、思索⋯冬天,亦是菠菜產出的季節,因為不愛它的土腥味,所以我喜歡汆燙後料理,用充滿海洋鹹香味的海苔片捲起,再用煎得軟嫩的金黃色蛋皮包捲起來,一道美麗且美味的蔬菜冷盤於焉完成。

食材

  • 菠菜, 150g
  • 海苔片, 2片
  • 蛋液
  • 雞蛋, 2顆
  • 鹽巴, 1/6茶匙
  • 玉米粉水, 1茶匙
  • 料理步驟image步驟 1:滾水加入1茶匙鹽和油(份量外),汆燙菠菜約1分鐘,撈起泡冰鹽水降溫,擰乾水份後切與海苔等長,用海苔片捲起。image步驟 2:蛋皮材料拌勻煎成2張蛋皮,熄火靜置待蛋皮稍涼,趁蛋皮還有些溫熱時將步驟1捲起。image步驟 3:捲起後,收口朝下靜置5分鐘,待食材完全冷卻後切塊享用。

    小撇步這次貓廚娘是用玉子燒鍋煎蛋,鍋子比較小,因此分做2次煎,若是用一般圓形平底鍋可直接煎成一大張蛋皮,菠菜不必對切整株汆燙,海苔包橫擺舖排將菠菜捲起後,再用蛋皮包捲後分切享用。
