清爽消暑!減醣蔬果雞腿蒸

減醣蔬果雞腿蒸

夏日節食又能吃飽的沒味料理,使用減醣蔬果和雞腿肉,低卡又健康,味道清爽,非常適合夏日消暑。

食材

  • 雞腿, 1隻
  • 蔥, 1根
  • 薑, 1小塊
  • 栗子南瓜, 0.5顆
  • 杏鮑菇或金針菇, 1把
  • 四季豆, 10根
  • 涼拌蔬果
  • 蕃茄, 1顆
  • 小黃瓜, 3根
  • 洋蔥, 1/3顆
  • 雞腿調味
  • 鹽, 1茶匙
  • 米酒, 1茶匙
  • 醬汁
  • 蒜頭, 3瓣
  • 辣椒, 3根
  • 蔥, 2根
  • 熟芝麻, 2茶匙
  • 優質初榨橄欖油, 3湯匙
  • 醬油, 2湯匙
  • 疏果白醋, 1.5湯匙
  • 鹽, 1茶匙
  • 棕櫚糖或二砂, 2茶匙
  • 辣油或香油, 少許
  • 料理步驟image步驟 1:先煮一鍋水準備蒸食材,雞腿洗淨擦乾,抹上鹽和米酒;栗子南瓜去皮(不去皮也可以隨個人喜好),去籽切塊狀;四季豆絲一下後洗淨對切;杏鮑菇切除底部後略沖洗後擦乾;蔥和薑洗淨;image步驟 2:盤中倒扣一小碗,擺上雞腿,雞腿上擺上蔥段和薑;另外將四季豆、杏鮑菇和南瓜擺在碗的邊緣,並撒少許鹽在蔬果上;image步驟 3:水滾放入蒸20分鐘;image步驟 4:蒸蔬果時處理涼拌用的蔬果和醬汁,小黃瓜先用鹽抹勻殺青,再與蕃茄、洋蔥用可飲用水洗淨;蔥、蒜、辣椒同樣要用可飲用水洗淨;image步驟 5:小黃瓜、蕃茄去籽囊切塊,洋蔥切絲;蒜頭切末,辣椒切小圈,蔥切蔥花。分別放入兩個碗裡;image步驟 6:將橄欖油燒熱到鍋邊微微冒煙,倒入醬料的碗裡;image步驟 7:加入調味料拌勻(此時醬料會偏鹹,等一下還要加雞湯);image步驟 8:南瓜蒸透了,雞腿也超嫩;將所有食材夾出放在大碗裡;image步驟 9:拿開倒扣的小碗就有很多鮮美雞湯,將雞湯倒到醬料碗裡拌勻;image步驟 10:雞腿用廚房剪刀將肉剪下來;image步驟 11:拌入雞湯的醬料,記得試味道做微調;食用時將醬料全部倒入大碗中,與雞腿和蔬果拌勻即可享用。
