古早味電鍋料理🐟破布子蒸魚

破布子蒸魚_電鍋料理

這是一道零廚藝的蒸魚料理,魚片、破布子、蔥薑,加上簡單的調味就能完成。這次用的是家人喜歡的扁鱈,肉質滑嫩沒細刺,搭配甘甜不死鹹的破布子,用電鍋簡簡單單蒸出好滋味♪

食材

  • 扁鱈, 370g
  • 青蔥, 2支
  • 薑片, 3片切絲
  • [調味料]
  • 破布子(籽), 1大匙
  • 破布子(汁), 1.5大匙
  • 米酒, 1大匙
  • 醬油, 1小匙(可略)
  • 醃料
  • 米酒, 2小匙
  • 鹽巴, 1/4小匙
  • 料理步驟image步驟 1:備好所有食材。扁鱈刮除殘留魚鱗,用廚房紙巾拭乾水份後,兩面抹上[醃料]醃漬10分鐘。破布子擠破去籽,青蔥部份切段,部份切絲(蔥絲泡冷水備用)。image步驟 2:取一蒸皿,先放上蔥白段。image步驟 3:再放上扁鱈,鋪上薑絲、蔥綠段,淋上[調味料]。image步驟 4:取出[電鍋],(外鍋)倒進1米杯水量,放上高蒸架,蓋上鍋蓋,按下開關。待鍋邊蒸氣出(約3分鐘),迅速放進蒸皿,開始蒸魚,蒸約8-10分鐘。image步驟 5:開關跳起時,夾除表面蔥段後,放上新蔥絲。再蓋回鍋蓋,利用餘熱燜軟新蔥絲即可。(約2分鐘)

    小撇步1.用的扁鱈厚度3公分。如魚片更薄,則縮短蒸煮時間。2.扁鱈如有肚洞,則須將肚洞內的黑色薄膜去除(腥味)。3.用筷子戳進魚肉最厚處,可輕鬆戳入且未沾黏即為熟。4.如使用的破布子(樹子)較鹹,醬油份量可省略。5.破布子擠破較易釋放味道,去籽則較好入口。6.盤底鋪蔥白段,蒸好的魚才不會沾黏盤底。7.放上新蔥絲,上桌比較美,亦可省略此步驟。
