濃郁鮮美,讓人大呼過癮!菊島石蟹大醬湯

菊島石蟹大醬湯

連日的滂沱大雨讓周遭空氣都被濡濕,身體還來不及適應溫度的變化,寒意便從四周包湧而來,此時喝上一碗辣蟹湯就能溫暖寒涼的身子,驅趕身體裡的濕氣。運用韓式味噌和辣椒醬作為湯底基調,加入澎湖野生石蟹與各式蔬菜燉煮大醬湯,湯頭濃郁鮮美,讓人大呼過癮,在秋日微涼的日子裡,品嚐微辣熱呼的石蟹大醬湯,不僅暖胃也暖心。

食材

  • 澎湖野生石蟹, 2隻
  • 白蘿蔔, 1/2根
  • 洋蔥, 1/4顆
  • 青蔥, 1根
  • 菇類和蔬菜, 適量
  • 豆芽, 1小把
  • 紅辣椒, 1根
  • 湯底
  • 韓式辣醬, 1T
  • 韓式大醬, 2T
  • 韓式辣椒粉, 1T
  • 蒜泥, 1T
  • 高湯或洗米水, 600ml
  • 料理步驟image步驟 1:食材大集合。事前準備:白蘿蔔切塊,嫩豆腐切塊,洋蔥切絲,青蔥切段,辣椒切斜片,大蒜磨泥或切末。image步驟 2:(1)先將蟹螯剪下。用剪刀剝除臍部。(2)剪除第一節蟹腳。(3)將剪刀由嘴部插入撬開蟹身與蟹殼。(4)將蟹殼上的蟹膏取出備用,並剪除蟹身的腮與蟹殼的砂囊等部份後刷洗乾淨,蟹身從中間對切。(5)剪除蟹殼邊緣的硬殼後刷洗乾淨。image步驟 3:取一湯鍋,放入韓式大醬、韓式辣椒醬、蒜末、昆布小魚乾高湯混合均勻,加入白蘿蔔,大火煮至沸騰後,小火續煮至蘿蔔熟軟。image步驟 4:加入螃蟹塊煮5分鐘。image步驟 5:加入所有食材煮熟,撒上辣椒片即可上桌。image步驟 6:在秋日微涼的日子裡,品嚐微辣熱呼、湯頭濃郁的石蟹大醬湯暖胃也暖心。

    小撇步1、高湯製作:昆布(5x5cm).............1片小魚乾 .....................3條清水⋯⋯⋯⋯⋯⋯600ml冷水入鍋煮至微滾即可熄火。
