抹茶紅豆菊花酥

看似複雜的宮廷御膳點心,其實材料的取得並沒有想像中難,而是以前的老百姓生活困苦、物資貧乏,所以在他們眼中,稍微高級一些的物料都是無法奢望的享受,由現代的眼光來看這些材料,其實都是很平常、不足為奇的,因此現代的我們要在家裡自己做來品嚐,可是一點都不困難的

食材

  • 油皮
  • 中筋麵粉, 270g
  • 無鹽奶油, 100g(切小塊)
  • 冷水, 100~110g
  • 油酥
  • 低筋麵粉, 170g
  • 無鹽奶油, 85g(切小塊)
  • 抹茶粉, 10g
  • 內餡
  • 減糖紅豆餡, 480g
  • 裝飾
  • 蛋黃液, 適量
  • 黑芝麻, 少許
  • 料理步驟image步驟 1:紅豆餡分成20等份備用。image步驟 2:將油皮材料全部放入麵包機攪拌缸內拌至麵糰呈光滑狀。image步驟 3:油酥同油皮方式 ,混合攪拌至與油皮相同軟硬度。image步驟 4:油皮/油酥各分割成20等份。image步驟 5:油皮包油酥收口朝上。image步驟 6:步驟5壓扁後擀成牛舌狀;再捲起成長條圓筒狀,收口朝上,再擀成細長狀,捲起成短圓筒狀,鬆弛約20分鐘。image步驟 7:將步驟6鬆弛好的油酥皮,收口朝上按壓後,兩側向中心捏合,壓扁後擀成圓片,再包入紅豆餡。image步驟 8:步驟7壓扁後,擀成扁圓形,用刀 (或剪刀) 將其均勻切成12瓣,再將花瓣翻轉成菊花狀。步驟 9:將蛋黃打散成蛋液,刷在步驟8的中間,並撒上少許黑芝麻。image步驟 10:放入已預熱上火180℃、下火160℃烤箱內,烤約20分鐘取出置涼即完成。image步驟 11:如圖
