生菜沙拉「2機制能瘦身」 醫:正餐前吃可降血糖30%

許多人為減肥會大量吃生菜沙拉,卻感覺效果不佳。對此,腸胃科醫師鄭泓志在臉書分享,其實多吃生菜沙拉確實有助控制體重,但要吃對順序,同時搭配好油;根據研究,若能「餐前先吃、加少量橄欖油、避免高糖佐醬」,生菜沙拉將能減脂、穩定血糖並改善代謝。

鄭泓志指出,根據國際知名期刊《Foods》2024年一篇綜論研究,以萵苣、羅馬生菜為主的沙拉,能透過2大機制降低肥胖風險:

●餐前先吃。在正餐前吃一碗沙拉,餐後血糖峰值可下降20%至30%,使胰島素分泌更穩定,並可減少脂肪合成及囤積,長期下來,每日熱量攝取可減少約150至200大卡。

●加少量橄欖油。每天吃大約400克生菜沙拉,同時搭配適量橄欖油,不僅可讓壞膽固醇下降10%至20%,還能改善血壓、降低代謝症候群風險,更重要是油脂有助吸收脂溶性維生素A、E、K與β-胡蘿蔔素,可使吸收率由10%以下提升至20%至40%,具抗氧化、抗發炎效果,使體重增加機率下降15%至25%。

鄭泓志並強調,生菜沙拉若吃錯,可能會愈吃愈胖,常見3大雷區包括:

●高熱量醬料。例如凱薩、千島等濃稠醬,一匙便超過100大卡,輕易抵銷沙拉優勢。

●高脂配料。包括麵包丁、培根、起司絲或炒堅果等,熱量較高,油脂也偏多,整碗沙拉熱量可能增加200至300大卡。

●甜味陷阱。含糖沙拉醬和大量水果會提高升糖指數,並刺激胰島素分泌,促進脂肪囤積。

鄭泓志提醒,真正有效減重的生菜沙拉吃法,應該是餐前吃、加好油、少醬料,掌握這3原則,輕食才能確實發揮作用。
