牛奶全脂或低脂根本不重要 哈佛教授揭影響健康關鍵
喝牛奶到底該選全脂還是低脂?這個問題困擾了許多人。《華盛頓郵報》報導,一項研究回顧指出,無論全脂還是低脂,牛奶、優格和起司與心血管疾病的風險關聯不大,這項發現挑戰了美國長年推崇低脂乳製品的官方飲食建議。然而,哈佛大學教授威列特提醒,事實上,多喝全脂牛奶仍與風險上升有關,但低脂牛奶則沒有這類問題。要判斷乳製品對健康的影響,關鍵在於我們把它拿來和什麼比較,以及用什麼食物替代。 過去之所以推崇低脂乳製品,是源於1960年代的研究,當時發現乳製品中的飽和脂肪會提高壞膽固醇,進而增加心臟病風險。因此,市場上興起「低脂」風潮,許多食品用精緻穀物或糖來取代脂肪。但這種替代方式本身也會對血脂造成負面影響,導致降膽固醇的效果大打折扣。 哈佛大學教授威列特指出,乳製品之所以被認為與心血管疾病呈「中性關聯」,是因為研究通常是將乳製品與精緻澱粉、含糖飲料或紅肉等不健康的食物進行比較,結果只是「不比那些更糟」,而非真正的健康首選。 威列特進一步解釋,關鍵在於我們拿什麼來取代乳製品。如果用堅果、大豆等植物蛋白來代替乳製品,心血管疾病和死亡風險會降低;但如果用紅肉來取代,風險則會上升。單就全脂牛奶來看,增加攝取量與心血管疾病風險提高有關,而低脂牛奶則沒有這個問題。 威列特建議,健康的飲食應優先攝取不飽和脂肪,像是大豆油、菜籽油和橄欖油,它們長期來看優於乳脂。若選擇乳製品,優格和起司等發酵類產品是更好的選項,但要注意的是,每天一份全脂乳製品對心血管風險的影響很小,真正重要的是總攝取量。 如果選擇低脂乳製品,要特別注意用來「替代熱量」的成分。若用糖或精緻澱粉來填補熱量,反而會對健康造成負面影響。更好的選擇是以堅果、植物油等健康脂肪與蛋白質來取代。此外,相較於牛奶,豆漿會是更健康的替代品,而堅果、大豆等植物來源的蛋白質也是更好的選擇。 吃蛋會升高膽固醇? 蒼藍鴿曝「吃的方式」才是關鍵台灣人肥胖原因並非吃太多澱粉 醫師曝從1物下手
