隨著年底的聖誕大餐、跨年聚會、尾牙,以及農曆年後的春酒與春節圍爐聚餐接踵而至,許多人在享受美食的同時,也擔心體重管理與肥胖問題。如何在這些頻繁的聚餐中,既能滿足味蕾,又能維持健康體態?行健大直健康管理診所的劉諭均營養師提供了一些實用的小撇步,讓你在節慶期間也能輕鬆保持健康。▲ 過年圍爐聚餐,營養師教您享受年菜健康不卡關。(圖/資料圖庫) 1. 211飲食法則:健康營養不缺席面對豐富多樣的圍爐菜餚,劉營養師建議採用211飲食原則:餐盤的1/2放蔬菜,1/4放置富含優質蛋白質的食物,剩餘1/4則為全穀雜糧類的澱粉食物。例如,品嘗經典年菜佛跳牆時,可以選擇其中的海參和雞肉作為蛋白質來源,搭配大量青菜如川燙小白菜或炒高麗菜,再加上少量的糙米飯或紅藜飯作主食。這樣的比例不僅有助於控制熱量,還能確保營養均衡。 2. 少油少鹽:清蒸燙煮不油炸傳統年菜如紅燒獅子頭、炸白鯧魚等,常因烹調方式而使用過多油與鹽。劉營養師建議改以清蒸代替紅燒滷煮、油炸。例如,可以在菜單中加入涼拌蒜味小黃瓜或涼拌海蜇皮作為開胃菜,這些料理不僅美味低卡,還能增加纖維攝取。獅子頭和炸白魚則可改用清蒸方式烹調,喝湯時也可先撇去浮油,減少脂肪攝取。 3. 飲食順序:水肉菜飯果過節時,容易因熱鬧的氣氛而不小心吃過量。劉營養師建議採用「水、肉、菜、飯、果」的飲食順序,這樣可以增添飽足感及穩定血糖波動。首先,先喝一小碗暖胃湯品如雞湯或蘿蔔排骨湯;接著選擇適量的蛋白質如滷雞腿或蒸蝦;然後夾取多量蔬菜如燙地瓜葉或炒芥藍;最後少量澱粉如1/2碗白米飯、年糕或發粿。餐後適量食用約一拳頭的水果代替甜點,如柑橘類、蘋果或鳳梨,不僅增加飽足感,還可增加膳食纖維攝取及增添清爽感。▲ 營養師建議採用「水、肉、菜、飯、果」的飲食順序。(圖/資料圖庫)  4. 無糖低糖飲品:健康飲料選擇春節餐桌上常見的汽水、奶茶或其他含糖飲料,容易讓熱量不知不覺增加。劉營養師建議選擇無糖茶飲,如烏龍茶或綠茶,這些飲品有助消化且能預防脂肪堆積。若有飲酒需求,應避免空腹飲用,並優先選擇低酒精濃度的酒類且適量飲用。根據衛生福利部的建議,成年男性每日飲酒不超過2單位,女性不超過1單位。 5. 原型高纖食材:菇蒟鮮蔬上餐桌準備年菜時,可以多考慮使用原型高纖食材,如菇類、蒟蒻和時令蔬菜,這些食材熱量低且富含營養,能讓你的餐桌更健康。 6. 規律運動與作息:飯後散步助消化春節假期除了享用美食,也別忘了活動身體。飯後可以全家一起到戶外散步,促進消化並增進感情。劉營養師提醒,年節期間也要保持規律的作息和充足睡眠,避免因熬夜或飲食不當而影響健康。▲ 春節假期除了享用美食,也別忘了活動身體。(圖/資料圖庫)
