甘鹹開胃極下飯!蔭鳳梨苦瓜滷肉

蔭鳳梨苦瓜滷肉_電子鍋料理

加了蔭鳳梨一起燉煮的苦瓜滷肉,不僅讓苦瓜的苦帶有回甘的好滋味,也讓肋排肉質變得軟嫩又美味,湯汁更是甘鹹開胃極下飯呢♪★

食材

  • 豬肋排, 350g
  • 苦瓜, 1條(300g)
  • 爆香材料
  • 薑片, 2片
  • 蒜頭, 6瓣
  • 紅辣椒, 1條
  • 香油, 3大匙
  • 滷汁
  • 醬油, 3大匙
  • 米酒, 1大匙
  • 冰糖, 2大匙
  • 清水, 500ml
  • 蔭鳳梨醬汁, 3大匙
  • 蔭鳳梨塊, 5小塊
  • 料理步驟image步驟 1:備好所有食材。豬肋排入冷水汆燙好,苦瓜去籽去囊,如(步驟2)。薑切片,蒜頭切末,紅辣椒切斜片,備用。image步驟 2:【苦瓜處理♪】苦瓜先去頭去尾,切對半。再用湯匙去籽去白囊。接著,洗淨並切成4公分不規則大塊,備用。image步驟 3:取一鍋(入2大匙香油),先將苦瓜煎焦香,撥至鍋邊後,再加進[爆香材料],並多加(1大匙香油)炒香。image步驟 4:取出[電子鍋],內鍋先放進(步驟3)的炒料,再疊上豬肋排壓住苦瓜避免浮起。加進[滷汁]後,蓋上鍋蓋,點按[粥湯模式]烹煮。烹煮完成時,續燜20分鐘入味即可。image步驟 5:完成囉~退火回甘的好滋味♪

    小撇步1.苦瓜品種很多,我用的白玉苦瓜最為不苦。2.如較喜歡苦瓜帶點脆度,可延後入鍋烹煮。3.苦瓜外皮上的果瘤,顆粒大且結實,代表品質好。4.苦瓜外皮為白色,較優。開始轉橘紅表示過熟,較不優。5.苦瓜苦味來源是籽和白囊,刮除越乾淨,吃起來越不苦。6.苦瓜煎過較不苦,怕苦也可事先抹鹽靜置30分鐘去苦水。7.[蔭鳳梨]也可換成[蔭瓜],滋味一樣是苦甘苦甘滴^___^
