譚敦慈曝獨門煮飯秘訣不升血糖 名醫激推「飯前一動作」半年狂瘦24公斤

想穩定血糖嗎?有「無毒教母」之稱的長庚護理師譚敦慈分享她的獨門煮飯祕訣,特別適合想控制血糖的人。她建議煮飯時米水比例抓在1:0.8,這樣不僅能降低米飯的糊化程度,讓飯煮得比較硬,還能增加吃飯時的咀嚼次數,對延緩血糖上升很有幫助。

「無毒教母」譚敦慈在《HEALTH 2.0》節目中公開她的煮飯撇步,她表示洗米不用洗太久,強調「輕、快、清」三原則,在2分鐘內洗3到4次,看到水有點微透明就差不多。煮飯過程更是簡單,她不添加任何油或冰塊等食材,堅持只要米本身品質夠好,單純用清水就能煮出香甜美味的白飯。譚敦慈坦言,因為家族有糖尿病史,因此特別留意主食的烹調細節。

醫師蕭捷健證實改變用餐順序對減重和控糖真的有幫助,他以一個女病患為例,這名女病患體重卡關很久,血糖也忽高忽低,後來在醫師建議下,她只是在吃飯前先吃蛋白質,短短半年,體重就從86公斤掉到62公斤,血糖也變得穩定。

蕭捷健指出,想控制飯後血糖,不妨試試在用餐前先吃點高蛋白食物,例如豆腐、雞蛋、瘦肉或蛋白飲。這樣做就像在胃裡鋪設一道「緩衝墊」,能有效延緩碳水化合物的吸收速度,讓血糖波動更平穩。他強調這不代表要完全不吃白飯,而是透過改變進食順序,讓飯後比較不會愛睏或嘴饞,對減肥跟血糖控制都很有幫助。這種飲食方法有研究背書,能有效降低飯後血糖的飆升。
