吃稀飯等於喝糖水?農糧署:過於簡化 搭配「這3樣菜」最健康

不少人認為「吃稀飯等於喝糖水」,不僅沒營養,還會讓血糖快速上升。不過農糧署近日在臉書專頁「鮮享農YA - 農糧署」表示,這種說法過於簡化,事實上,不論從中醫或是現代營養學來看,稀飯與米湯不僅具有營養價值,更是養胃、復元的良方。

根據中醫典籍記載,《本草綱目》指出米湯能和胃、養陰,《傷寒雜病論》中張仲景也曾用「米飲」幫助病人恢復,《食療本草》則提到米湯能補虛止渴,養胃氣。此外,《千金要方》記錄藥後可以米湯「調和藥性」,顯示稀飯自古就被視為溫和滋養的食物。

以一碗約300公克(白米50公克加水300毫升)稀飯為例,含熱量約150大卡、碳水化合物約33公克、蛋白質約3公克,並含有維生素B1、鉀、鎂、磷等礦物質,且脂肪含量極低。

農糧署指出,要比較食物對血糖的衝擊,不能只看升糖指數(GI),還要考慮升糖負荷(GL)。稀飯的升糖指數(GI)雖略高於米飯,但由於水分多,碳水化合物總量低,其實升糖負荷(GL)並不高,對血糖影響遠小於糖水。糖水的GI接近100,GL值也高,才會造成血糖劇烈波動。

農糧署提醒,吃稀飯時可以搭配蛋白質(如豆腐、魚、蛋、肉)、膳食纖維(青菜、菇類)及健康油脂(如芝麻油、堅果)等食材,能降低餐後血糖波動並延長飽足感。均衡飲食,比忌避單一食物更重要。
