冬天吃鍋小心「熱量陷阱」!火鍋料2、3顆就破百卡 營養師:這樣吃更健康

冬季火鍋熱潮來臨,在吃火鍋圍爐的時候當然少不了各式火鍋料,營養師高敏敏近日在臉書粉絲專頁提醒,許多火鍋料其實藏著高熱量與高鈉陷阱,稍不注意便可能造成熱量攝取過量,增加身體負擔。

你最愛的火鍋料 熱量有多高?

高敏敏指出,火鍋料平均2至3顆就可能突破百卡,其中以油條(27g、148kcal)、花枝漿(65g、161kcal)與炸豆皮(20g、95kcal)熱量並列前三;常見的百頁豆腐、米血糕、龍蝦沙拉丸等,熱量也都不容忽視。她提醒,許多加工製作的火鍋料含有高鈉、飽和脂肪或添加物,可能增加腎臟負擔,提高心血管疾病風險,也因澱粉比例高、營養密度低,容易越吃越多卻不易有飽足感。

除了熱量問題,加工火鍋料因含色素、防腐劑等添加物,也可能使敏感族群出現腸胃不適或皮膚搔癢等反應。

想吃得健康 哪些火鍋料能替換?

高敏敏建議,民眾若想吃得更安心,可用「少加工、多原型」的方式替換食材,例如以新鮮豆皮取代炸豆皮、以真正蟹肉取代蟹味棒;米血糕則適當與主食(如飯、麵)替換,避免澱粉重複攝取造成熱量累積;蛋餃可改為直接加入新鮮雞蛋,減少加工餡料與油脂,營養密度更高。另外,若選擇以清湯烹煮,也能減少油脂溶入湯底,使整體負擔更低。

她提醒,適當選擇食材、掌握份量,才能在享受火鍋的同時避免熱量攝取過多,吃得美味又健康。
