牛肉燴飯

蒜香十足,牛肉燴飯口感鬆軟,肉質嫩滑,空心菜補足纖維,整體味道豐富多樣,還含有豐富的蛋白質及維生素,超適合當正餐食用。

食材

  • 牛里肌或板腱, 450克
  • 空心菜, 250克
  • 洋蔥, 1顆
  • 蒜頭, 4瓣
  • 辣椒, 1根
  • 蔥, 2根
  • 白飯, 4碗
  • 牛肉醃料
  • 醬油, 1湯匙
  • 醬油膏或蔭油, 1湯匙
  • 米酒, 0.5湯匙
  • 黑胡椒粉, 少許
  • 太白粉或玉米粉, 4茶匙
  • 香油, 1湯匙
  • 調味料
  • 鹽, 2茶匙
  • 醬油, 1.5湯匙
  • 棕櫚糖或二砂, 1.5茶匙
  • 烏醋, 1湯匙
  • 料理步驟image步驟 1:牛肉先用水沖洗浸泡3分鐘;瀝乾後切條狀,下醃料抓勻,冷藏醃5分鐘;image步驟 2:空心菜用手摘折成段,洗淨瀝乾;洋蔥去皮切絲;蒜頭切較粗的蒜末;辣椒洗淨後斜切;蔥洗淨切段,把蔥白和蔥綠分開放;image步驟 3:鍋燒熱下兩湯匙橄欖油,下醃好的牛肉鋪平,中大火煎到一面上色後,再翻面繼續煎;image步驟 4:牛肉兩面都煎炒上色後,放蔥白、一半的蒜末和一半的洋蔥下鍋翻炒出香味後,起鍋備用;image步驟 5:原鍋下油,放入另一半的蒜末與洋蔥炒香;image步驟 6:下空心菜、鹽拌炒;image步驟 7:炒到空心菜8分熟;image步驟 8:加熱水剛好淹到空心菜;image步驟 9:倒入炒好的牛肉,中大火煮一下;試湯汁後下其它的調味料;煮到大滾加太白粉水勾芡;image步驟 10:最後放蔥綠和辣椒快速拌炒,即可淋在白飯上。
