紅酒燉牛腱心

入口即化的紅酒燉牛腱子心,絕對是宴會上最吸睛和獲得好評的菜色,搭配兩種不同口感的根莖蔬菜,營養好吃又有飽足感,香濃的醬汁無論是配飯或沾麵包都超讚,是道節慶感十足的菜餚。

食材

  • 牛腱子心, 1公斤
  • 洋蔥, 0.5顆
  • 蒜頭, 3瓣
  • 月桂葉, 3片
  • 紅蘿蔔, 1根
  • 馬鈴薯, 2顆
  • 紅酒, 3米杯
  • 調味料
  • 蕃茄糊, 2湯匙
  • 鹽, 2茶匙
  • 黑胡椒粉, 適量
  • 百里香或義式香料, 適量
  • 料理步驟image步驟 1:選用牛腱子心來慢燉,清洗乾淨後擦乾,兩面都撒上鹽和黑胡椒粉;將馬鈴薯和紅蘿蔔洗淨去皮切塊,蒜頭拍扁去皮切末,洋蔥切塊;image步驟 2:鍋燒熱,放入優質鮮榨橄欖油,牛腱子心入鍋煎上色;image步驟 3:將牛腱子心切成適當的厚塊;image步驟 4:以煎肉的原鍋再放點優質鮮榨橄欖油,炒香蒜末與洋蔥;image步驟 5:放入蕃茄糊炒香;image步驟 6:倒入紅酒先煮滾,再加入月桂葉,煮到紅酒的酒味揮發:image步驟 7:加入足量的滾水淹沒牛肉,並放入百里香或義式香料煮滾;image步驟 8:蓋鍋蓋小火燜煮1小時後,關火燜到降溫;image步驟 9:開蓋查看牛腱子心的柔軟度,試情況再次煮滾,因為要煮到牛腱有點軟度後才放紅蘿蔔與馬鈴薯:image步驟 10:牛腱肉柔軟度符合自己要求後,用鹽和黑胡椒粉調味,並放入紅蘿蔔和馬鈴薯,再次煮滾,蓋鍋蓋悶煮半小時關火,靜置放涼;image步驟 11:再次煮滾,試味道微調即可。
