暖呼呼粥品簡單上桌!皮蛋瘦肉粥

皮蛋瘦肉粥_一鍋到底零廚藝

皮蛋瘦肉粥是一道簡單煮,但又滋味十足的粥品。這回學阿基師加進了少許圓糯米一起煮,多了一股獨特的香氣,十分好吃呢♪

食材

  • 梅花肉絲, 350g
  • 白米, 1米杯
  • 圓糯米, 1/4米杯
  • 清水, 10米杯
  • 配料
  • 皮蛋, 4顆
  • 油條, 適量(可省略)
  • 蔥花, 適量
  • 調味料
  • 鹽巴, 1/2大匙
  • 白胡椒粉, 1/4小匙
  • 醃料
  • 鹽巴, 1/4小匙
  • 白胡椒粉, 1/4小匙
  • 玉米粉, 少許
  • 料理步驟image步驟 1:備好所有食材。米洗淨後,置於鑄鐵鍋內直接泡水1小時。皮蛋剝殼後切小丁,油條剪小塊,蔥綠切蔥花。豬肉絲用[醃料]醃30分鐘。image步驟 2:米泡軟後,原鍋加進豬肉絲,先將粥煮滾,期間須不時攪拌,避免米粒黏鍋。並撈除表面浮沫。(有薑片也可加兩片)image步驟 3:再轉中火煮15分鐘,並蓋上鍋蓋,略留縫隙。接著,關火並蓋上鍋蓋,利用餘熱燜10分鐘讓粥更濃稠。image步驟 4:用鑄鐵鍋來煮粥,輕輕鬆鬆就能把粥煮綿密^___^image步驟 5:最後,拌進[調味料]、皮蛋丁後,邊煮邊拌2分鐘即可!image步驟 6:盛碗,撒上適量的蔥花和油條就完成囉♪

    小撇步1.用的是23公分的鑄鐵鍋。2.煮粥的米水比例,米:水=1:10,可適情況再補充熱水。3.煮好的粥利用餘熱再燜過,粥的濃度可增加。4.鹽巴調味份量可依鹹度喜好調整,如用高湯煮,鹽巴份量要減少。
