正宗擔仔麵

正宗的擔仔麵的精華來自於蝦頭所熬煮的高湯,煮好的麵條拌上一匙油蔥肉燥,淋上鮮美高湯,就是一碗純樸又道地的好味道

食材

  • 絞肉, 300g
  • 白蝦, 10支
  • 醬油, 50cc_
  • 紅蔥頭, 50g
  • 砂糖, 10g
  • 鵪鶉蛋, 100g
  • 高湯
  • 蝦頭, 10支
  • 蔥, 1根
  • 料理步驟image步驟 1:食材準備為了更貼近台南味,醬油和糖的量稍微下的重一些亦可依喜好調整image步驟 2:少許由紅蔥頭爆香image步驟 3:加入絞肉拌炒.淋上醬油image步驟 4:加砂糖加水淹過食材轉小火熬煮肉燥image步驟 5:可依喜好加入鵪鶉蛋或雞蛋亦可image步驟 6:將蝦殼去除保留蝦頭與蔥段備用image步驟 7:少許油爆香蝦頭及蔥段image步驟 8:加滿水熬煮成高湯image步驟 9:熬煮成蝦高湯image步驟 10:煮好的麵條淋上肉燥及韭菜image步驟 11:擺上白蝦加滿高湯即完成image步驟 12:鹹度來自於肉燥~碗純樸又道地的好味道
