酥鬆化口、甜而不膩!台式鳳梨酥

台式鳳梨酥

外皮酥鬆化口,鳳梨內餡甜而不膩不用特定節日~學會自己做,想吃的時候隨時動手做~

食材

  • 低筋麵粉, 240克
  • 無鹽奶油, 160克
  • 糖粉, 100克
  • 奶粉, 20克
  • 全蛋液(約中型蛋一顆), 55克
  • 鹽巴, 2克
  • 鳳梨餡, 360克
  • 料理步驟image步驟 1:低筋麵粉與糖粉分開過篩後備用1奶油加入糖粉與鹽巴打至泛白後分次加入蛋液乳化2依序倒入奶粉與低筋麵粉拌勻3取出4桌面撒上些許手粉(高筋麵粉)拌勻揉成不黏手麵團image步驟 2:糕皮分割為每個18克/30顆鳳梨餡分為每個12克/30個揉圓備用1糕皮包入鳳梨餡2揉圓3搓成橢圓形放入模型中4用力壓緊,整齊排放烤盤上image步驟 3:上火170/下火210 烘烤12分鐘底部上色烤盤取出將鳳梨酥翻面續烤烤箱調整溫度上火160/下火180 續烤6分鐘上色完成

    小撇步烤溫與時間請依自家烤箱做調整喜歡內餡多一點可調整鳳梨餡的重量此食材份量可做30顆鳳梨酥
