上海排骨菜飯

像掌心一樣厚實里肌肉排,刀背將筋脈拍鬆,蒜頭,胡椒,醬油,一點點太白粉用手按摩讓水份吃進入肉排裡,醃排骨一定要用黃酒(紹興,花雕)才會香!下鍋中火放著慢慢煎,一股淡淡酒香和醬香迷漫整個廚房~昨夜的剩飯與青江菜拌炒,就是一份美味的佳餚

食材

  • 里肌排, 200g
  • 青江菜, 80g
  • 雞蛋, 2顆
  • 醃排骨
  • 紹興酒, 20cc
  • 醬油, 20cc
  • 蒜頭, 5瓣
  • 白胡椒, 1匙
  • 料理步驟image步驟 1:里肌排用刀背拍斷筋膜.醃料按摩抓醃約20分image步驟 2:雞蛋兩顆青江菜洗淨切成段備用image步驟 3:排骨下鍋乾煎至全熟起鍋備用image步驟 4:起油鍋下雞蛋與米飯一同拌炒image步驟 5:最後加入青菜拌炒.少許鹽巴調味即完成
