外酥內多汁!酥炸肉丸子

酥炸肉丸子

外型可愛圓鼓鼓的肉丸子很受孩子們的歡迎外表炸的香酥,內部軟彈多汁還加了細蔬菜增加風味與營養🌸🌸🌸🌸🌸🌸🌸🌸🌸

食材

  • 豬絞肉, 300克
  • 蝦仁, 100克
  • 芹菜切細碎, 一大匙
  • 胡蘿蔔切細碎, 一大匙
  • 青蔥, 一支
  • 蒜泥, 一小匙
  • 薑泥, 1/2小匙
  • 雞蛋, 半顆
  • 調味
  • 鹽, 1/2小匙
  • 日式昆布醬油, 2小匙
  • 白胡椒, 適量
  • 料理步驟image步驟 1:芹菜,胡蘿蔔,青蔥,切細碎;蝦仁切小丁狀(較有口感)image步驟 2:豬絞肉加鹽拌至有黏性,可用調裡機或手拌至有黏性image步驟 3:加入薑泥以及蒜泥還有雞蛋拌勻,且有香氣釋出image步驟 4:加入芹菜,胡蘿蔔,青蔥,蝦仁以及醬油與白胡椒拌勻image步驟 5:肉丸子餡即完成image步驟 6:起一油鍋,讓油溫到達160-170度,160度時就可以開始準備將丸子塑成圓了,可以用手的虎口捏圓塑形,或是手拿一支湯匙塑成圓型,這次丸子大小約貢丸大小,好入口下鍋油炸的時間也不會太久image步驟 7:這次份量分兩批下油鍋,一次大量下油鍋會影響油溫影響成品image步驟 8:入油鍋炸2-3分鐘,湯匙壓肉丸子帶有彈性,可以轉大火,讓油溫升高,再炸15-20秒,表面金黃上色,即可起鍋image步驟 9:炸好的丸子可以靜置3-5分鐘,讓內部在更熟成些,讓汁液鎖在頭image步驟 10:切開都還有飽滿的湯汁竄出,非常美味image步驟 11:外表香酥,內部軟彈多汁,很受孩子們的歡迎的肉丸子
