美式炸雞

讓人吮指回味的美式炸雞,外皮酥脆,肉質juicy,太美味了!

食材

  • 帶皮去骨雞腿, 600克
  • 雞肉醃漬
  • 無糖希臘優格, 一杯
  • 食鹽, 1又1/2小匙
  • 荳蔻(cardamon)粉, 一小匙
  • 紅椒(paprika)粉, 一小匙
  • 蒜泥, 一小匙
  • 粉衣
  • 中筋麵粉, 60克
  • 玉米粉, 40克
  • 泡打粉, 一小匙
  • 洋蔥粉, 一小匙
  • 蒜粉, 一小匙
  • 紅椒(paprika)粉, 一小匙
  • 芫荽(coriander)粉, 一小匙
  • 黑胡椒粉, 一小匙
  • 食鹽, 1/4小匙
  • 其他
  • 雞蛋, 一顆
  • 牛奶, 50cc
  • 料理步驟image步驟 1:雞腿處理:雞腿洗淨擦乾,用剪刀將雞腿剪開,沿著骨頭邊順著剪,將骨與肉分開image步驟 2:處理好的雞腿肉600克image步驟 3:準備醃雞肉醬料將所有醬料放入一半盆中,拌勻若喜歡辣味,可以多加一小匙辣椒粉紅椒粉只有增色增香,並不具辣味image步驟 4:將去骨帶皮雞腿放入醬料中拌勻,入冷藏,放置隔夜image步驟 5:隔天開始料理,先準備麵衣將麵食材料放入一寬面深碗中,拌勻image步驟 6:取出雞腿,加入一顆雞蛋以及50cc鮮奶,拌勻image步驟 7:將雞腿雙面沾上粉,image步驟 8:之後重複這動作,將其它雞腿也沾附上粉image步驟 9:再一次沾粉,方法為,將已經沾過一次粉的雞腿放入盆中剩餘的液體中兩面沾附液體,讓表面潮濕image步驟 10:再次兩面沾附粉類,意思就是沾了兩回粉,此時表面有點呈現魚鱗狀了image步驟 11:備一油鍋,170度放入雞腿,油炸6分鐘,(油炸時間會依雞腿大小而不同!這次5條去骨雞腿600克)建議,一次不要放入太多雞腿,避免油溫下降,影響炸物口感!即可起鍋image步驟 12:油炸好之後,放在網勺上靜置2-3分鐘image步驟 13:即可享用,美式炸雞
