不油不膩好開胃!年糕排骨

年糕排骨

排骨裡頭有年糕,ㄧ道菜吃的到排骨的香跟年糕的Q軟,起鍋前的巴薩米克醋,讓整道料理吃起來不油不膩好開胃。

食材

  • 排骨, 700克
  • 韓式年糕, 500克
  • 薑, 3片
  • 蔥, 1根
  • 蒜, 2瓣
  • 米酒, 1湯匙
  • 調味料
  • 醬油, 2.5湯匙
  • 棕櫚糖或二砂, 1.5茶匙
  • 米酒, 1大匙
  • 巴薩米克醋, 1湯匙
  • 配料
  • 洋蔥, 0.5顆
  • 青辣椒, 0.5根
  • 紅辣椒, 0.5根
  • 蔥花, 1根
  • 料理步驟image步驟 1:排骨洗凈,蔥洗凈、薑切片、蒜拍扁;年糕要選圓條狀;image步驟 2:排骨冷水下鍋,放蔥、蒜頭、薑片和米酒,image步驟 3:小火煮滾後再煮30分鐘;image步驟 4:煮好後馬上起鍋泡冰水降溫,排骨千萬不要煮過頭,否則去骨塞年糕時容易破碎;煮排骨的薑片和蒜頭要留下,等一下還會用到;image步驟 5:完全降溫後,直接用手推鬆兩邊凸出的骨頭,就可以簡單的移除;image步驟 6:然後塞入年糕;image步驟 7:洋蔥切小丁,青、紅辣椒去籽切圈狀;剩下的年糕就等一下一起煮;蔥用可飲用水洗凈後擦乾,切蔥花備用;image步驟 8:鍋熱放少許橄欖油,排骨下鍋煎炒上色,放入蒜和薑片,加入糖拌炒;image步驟 9:放入醬油翻煮上色,加入米酒煮滾;image步驟 10:加入剩餘的年糕,再次翻炒上色;image步驟 11:加入淹過排骨的熱開水,蓋鍋蓋小火燜煮20~25分鐘;image步驟 12:開鍋蓋轉中大火收汁,試味道微調,然後加入洋蔥丁並倒入巴薩米克醋拌炒均勻;image步驟 13:加入辣椒圈拌勻即可,起鍋後灑上蔥花享用。

    小撇步如果覺得麻煩,其實也可以不去骨,直接帶骨煮年糕,ㄧ樣很好吃喔。
