酥脆不油膩!炸雞

炸雞

最受歡迎的炸物料理~在家準備個雞腿肉或是雞胸肉來製作記得二次炸的時候油溫拉高,這樣吃起來會比較不油膩喔!

食材

  • 雞腿肉, 2片(約550g)
  • 蒜末, 1大匙
  • 薑末, 1小匙
  • 蛋黃, 1顆
  • 醃製醬料
  • 醬油, 2大匙
  • 糖, 1大匙
  • 高筋麵粉, 4大匙
  • 酥炸粉, 2大匙
  • (啤酒或清水)可酌量加入調整粉, 2大匙
  • 料理步驟image步驟 1:準備食材雞肉切塊image步驟 2:把雞肉、所有食材、醬料放入器皿中抓勻image步驟 3:再加入粉料拌勻image步驟 4:可觀察粉料的濃稠度,粉料濃稠裹住的粉會厚一些!炸出來的外皮也會厚!不喜歡這樣的感覺,可酌量加入一些水量調整濃度。再來就靜置30分鐘,讓醬料給雞肉吸收~image步驟 5:準備一鍋熱油,油溫熱了才把雞腿肉依序放入image步驟 6:先炸第一次,表面有微金黃色澤,就可以先取出備用image步驟 7:把油溫拉高後,才再把雞腿肉放入二次炸,讓顏色呈現更漂亮的金黃色澤image步驟 8:取出瀝乾油脂,就可以享用囉

    小撇步可以直接都使用酥炸粉(如果是使用像是日清品牌有調味的酥炸粉,雞肉就不用調味囉~避免過鹹)
