高麗菜防癌又一堆好處!營養功能醫學專家劉博仁醫師表示,「一位患者觀察到我家餐桌上幾乎都有高麗菜」,高麗菜平價、好取得,是日常餐桌上不可或缺的健康選擇。

劉博仁近日在臉書說,高麗菜又稱甘藍,是十字花科蔬菜中的營養明星,它富含維生素C、K與葉酸,對免疫力、凝血與細胞修復都有幫助。

劉博仁指出,高麗菜含有大量膳食纖維,有助腸道蠕動、預防便祕,同時能穩定血糖;最特別的是其中的植化素「硫代葡萄糖苷」,可分解為具抗癌作用的異硫氰酸鹽,對於預防乳癌、消化道癌症有潛在好處。

劉博仁提到,高麗菜熱量低,適合減重飲食,鉀含量高,對血壓控制也有益,建議以清炒、涼拌或蒸煮方式烹調,避免過度加熱以保留營養;腸胃敏感或甲狀腺功能低下者,應避免大量生食。
