櫻花相思乳酪慕斯

這款甜點的風味相當特別,鹽漬櫻花、蜜紅豆、生乳酪、檸檬、牛奶及鮮奶油,交織組合成一種會讓人回味無窮、餘韻繞樑三日之感。蜜紅豆及檸檬汁提供甜裡微酸的口感,伴隨的是鹽漬櫻花的香氣,還有生乳酪、牛奶及鮮奶油構成的濃郁奶香味兒,因使用打發鮮奶油,呈現的是清爽蓬鬆輕盈感,推薦大家一定要試看看唷~~

食材

  • 鹽漬櫻花, 40g
  • 奶油乳酪, 100g
  • 細白砂糖, 40g
  • 檸檬汁, 1tsp
  • 牛奶, 100ml
  • 免泡吉利丁粉, 2.5g
  • 蜜紅豆, 60g
  • 動物性鮮奶油, 100ml
  • 料理步驟image步驟 1:鹽漬櫻花先稍甩掉沾附的鹽後以水泡約10分鐘,放在廚紙上吸乾水分,再挑出六朵完整的做裝飾。image步驟 2:奶油乳酪(cream cheese)打至柔順後,加入砂糖及檸檬汁,再攪拌均勻。冬天時,請提早將奶油乳酪回復室溫狀態,或用微波爐加熱軟化。image步驟 3:牛奶加熱至微冒泡後,加入免泡吉利丁粉,攪拌均勻。使用2.5g的吉利丁粉,發現因天氣熱,一離開冰箱周圍會有融化現象,無法接受者,可增加到3g唷。image步驟 4:等牛奶降溫後,邊攪拌邊加入步驟2,攪拌均勻後,放入櫻花及蜜紅豆,一樣攪拌均勻。image步驟 5:動物性鮮奶油打至八分發。夏天可在鋼盆下墊冰塊或隔冰水會較容易打發。image步驟 6:再將打發的鮮奶油加入步驟4中,攪拌均勻。image步驟 7:倒入模具中,擺上裝飾用櫻花,送入冰箱冷藏3-4小時。可使用直徑6cm的布丁模(模具內側先抹上一層薄薄的油),脫模後形狀會較平整。而紙模就不需要脫模,直接用湯匙舀來吃~~image步驟 8:象徵著“忍”與“紅緒”愛情的「櫻花相思乳酪慕斯」就完成嚕~~淡淡的粉紅色加上美麗的櫻花,滿足你的粉紅少女心!!

    小撇步※建議器具使用電動攪拌器,才能仔細將櫻花及蜜紅豆與奶油乳酪混合物混合,最後要混合鮮奶油時再改用拌刀。
