別以為冬粉最健康!營養師曝光NG吃法 恐會增加高血壓風險

台灣有不少料理都含有冬粉,也有人會因為冬粉熱量低,將其取代白飯!不過營養師「老辜」就指出,冬粉會讓人誤會是減肥好夥伴,但調理方式的不同,反而會攝取更多鈉,增加高血壓風險。

營養師老辜於粉專「老辜營養與科學」指出,涼拌菜、火鍋、滷味、湯麵到減肥菜單,總是可以看到冬粉的身影,透明又輕盈的外觀,讓人聯想到「熱量低、吃不胖、最健康」,不過究竟如何呢?老辜從多方面進行分析。

老辜談及營養密度,冬粉的原料為綠豆,但製造過程中僅保留大部分的澱粉,而綠豆本身的礦物質與維生素等,大部分營養都流失掉,因此「從營養密度來看,它比綠豆更單一。」

光看膨脹後的冬粉,熱量低不足以評價它是否「健康」,因為真正決定它健康與否的是料理方式、份量與整體搭配。據南韓研究稱,麵食類湯品若鈉攝取過多,將與高血壓風險相關。

老辜說明,常見的冬粉料理都少不了油鹽糖的料理與調味,諸如炒冬粉「多油、高鈉」,涼拌冬粉常會使用芝麻油、糖與醬油,而麻辣鍋冬粉則是湯頭辣油厚重、鹽分驚人。

老辜建議,料理時可多放蔬菜,不只增加膳食纖維,還能增加飽足感,還得注意烹調時的用油或重口味的湯頭;同時也能搭配蛋白質,加入豆腐、豆干、魚肉、瘦肉、蛋等。

對於不少人想靠餐餐吃冬粉減肥,卻忽略料理方式以及份量的潛在影響,老辜認為,均衡飲食才是邁向健康的關鍵。至於健康的體態管理,在於整體飲食的選擇,以及份量的控制。

最後,老辜解釋,他並非否定冬粉,而是希望大家不要以「二分法」看待食材,「沒有一種食材,最完美的。請善用食材、學習搭配、懂得節制」。
