雞排不只好吃!營養師揭「5大健康風險」 這樣吃更容易致癌、肥胖

在台灣,雞排不僅是街頭小吃的代表,更是朋友間打賭時的常見獎品。然而,這片金黃酥脆的美味背後,卻隱藏著高油、高鈉、高熱量的健康風險。雖然雞排的美味無可否認,但過量食用可能會對健康造成不小的影響。

雞排的五大健康風險

  1. 血管硬化的隱憂

雞排在高溫油炸過程中,蛋白質的營養素會被破壞,形成「醣化蛋白質」,這種物質會損害血管的彈性,導致血管硬化。長期食用可能增加高血壓、中風及冠心病等心血管疾病的風險。

2. 致癌風險的提高

油炸時的高溫容易產生「多環芳香烴(PAHs)」等致癌物質,尤其是在高脂肪環境下更容易產生氧化物。經常攝取油炸食品,可能會提高腸胃癌、肝癌等癌症的風險。

3. 肥胖與代謝疾病的風險

炸雞外層的麵粉或麵包粉在高溫油炸後吸收大量油脂,熱量比原材料高出2-5倍,容易導致脂肪堆積,引發肥胖及代謝性疾病。建議使用氣炸鍋或烘烤方式來減少油脂攝取。

4. 腎臟負擔加重

雞排在醃製階段加入大量鹽分,炸完後再灑上胡椒粉或其他調味料,整片雞排的鈉含量常常超標。腎臟必須加倍工作才能排掉多餘的鈉,長期下來可能造成腎臟壓力,甚至提高腎病風險。

5. 心血管疾病風險增加

高油與高鈉的組合會讓血脂升高、血管收縮、血壓飆升,心臟負擔加重,增加中風、心肌梗塞的風險。

如何聰明享受雞排

  • 去皮再吃:去掉麵衣和雞皮可以大幅降低吸油量與熱量,尤其是麵衣是最容易吸油的部分。
  • 不加九層塔:九層塔非常會吸油,搭配著吃會攝取過多油脂。
  • 不額外加調味料:雞排本身已經調味過,再加醬或調味料會讓鈉含量爆表,以原味為主比較保險。
  • 搭配無糖飲料:已經吃炸物了,就別再喝含糖飲料,選擇無糖茶或無糖氣泡水,能減少身體負擔。
  • 營養師的建議

    營養師提醒,炸物的食用頻率、份量及搭配方式都很關鍵。如果已經吃了高油、高鈉的雞排,當天其他餐應多補充蔬菜、水分及原型食物,並盡量避免再吃鹹酥雞、薯條等二次重炸的食品,讓身體有喘息的空間。
