怕糖尿病?8成台人水果吃不夠 專家揪「3錯誤吃法」反飆血糖

台灣被譽為水果王國,營養師曾建銘觀察,民眾對吃水果多半抱持怕胖、怕甜的態度,甚至認為有脂肪肝或糖尿病就絕對不能碰。對此,營養師直言,大家真的「怕錯對象了」,國健署調查顯示,台灣其實有超過8成的人水果根本吃不夠。他強調,水果從來不是導致變胖、罹患糖尿病的元凶,「吃錯形式、吃錯份量」才是最大問題。

營養師曾建銘在粉專發文分享,門診中常遇到民眾一聽到「我建議吃水果」,第一反應就是退避三舍。他點破迷思,指出多數人的真實情況往往是踩中了地雷吃法,才導致熱量與血糖失控。他列舉出以下3種常見的錯誤習慣:

1. 把果汁當水喝:許多人覺得吃水果麻煩,直接買果汁代替,但濾掉纖維後只剩下糖水,反而會讓血糖飆升。

2. 飯後狂吃一大盤:正餐吃撐後,再切一大盤芒果邊看劇邊吃。營養師提醒,這叫作「額外加餐」,熱量當然會爆炸。

3. 把果乾當健康零食:拿果乾當零食一口接一口,卻忽略其體積縮小,一不小心就會吃掉好幾顆新鮮水果的糖分。

「水果不是只有糖!」曾建銘說明,水果本身自帶維生素C、膳食纖維、多酚與植化素,這些都是喝手搖飲、吞維他命錠無法完全取代的「營養神隊友」。

為了讓民眾安心攝取營養,曾建銘也傳授「安心吃水果3守則」。他建議,首先必須「抓好份量」,每天建議攝取2份,1份大約是1個拳頭大,若切塊則約為大半碗的量;其次要堅持「吃原型」,藉由水果的咀嚼感與纖維增加飽足感,讓血糖慢慢上升,絕對不要把果汁當作水果;最後則是掌握「分次吃」原則,糖尿病或減重族群可將水果安排在餐後或兩餐中間當作點心,避免一次把一整天的扣打全部吃完。

曾建銘也比喻:「水果就像白飯,是必須的營養,但你不會把白飯當Buffet吃到飽。」他呼籲大眾別再妖魔化水果,日常仍應適量攝取蘋果、芭樂等新鮮水果來補充身體所需。
