【台粵年菜比拚】「玖尹」中西結合併出粵菜新火花!「粵式脆皮豬肘」cos德國豬腳 「黑松露雞蒜香糯米飯」增添味蕾奢華感

在台北伊通街開張3年,結合新派粵菜與精緻港點的「玖尹」,以現代創新手法演繹粵菜及港點,在摩登多元新食尚中彰顯粵式料理深厚底蘊,成為許多人心目中的新潮時尚中餐廳代表。今年行政主廚李冠儀再次發揮天馬行空創意,打造出充滿年味與特色的驚喜美饌。

雖然喜歡發揮創意,但李冠儀認為保留菜系傳統的「基本功」相當重要,例如「粵式脆皮豬肘」便是結合德國豬腳的概念,但仍以傳統的五香、月桂等中藥材及中式醬汁醃製,外皮酥香內軟嫩,單吃就相當入味。
