用電鍋簡單做美食!海鮮薑黃飯

海鮮薑黃飯_電鍋料理

滿滿的鮮甜海味,是海鮮飯廣受大眾喜愛的原因。搭配用薑黃粉浸泡上色的優質國產米,黃澄澄的漂亮米粒色澤,使得海鮮飯看起來更加美味好吃呢♪FB歡迎來聊聊 :)

食材

  • 大白蝦, 100g
  • 透抽, 70g
  • 蟹腿肉, 80g
  • 珍珠干貝, 50g
  • 白酒, 2大匙
  • 蒜末, 2大匙
  • 無鹽奶油, 2小匙
  • 白米, 2米杯
  • 薑黃粉, 1小匙
  • 雞高湯, 2.5米杯
  • 調味料
  • 玫瑰鹽, 1/2小匙
  • 粗黑胡椒粒, 1/2小匙
  • 料理步驟image步驟 1:備好所有食材。大白蝦去蝦頭蝦腳,勾除腸泥,透抽切圈狀。蟹腿肉用2大匙米酒(份量外),醃漬去腥10分鐘。珍珠干貝用2大匙白酒泡軟。白米洗淨,加進高湯、薑黃粉拌勻後,浸泡30分鐘顯色。image步驟 2:取出電鍋,(內鍋)加進無鹽奶油、蒜末、蟹腿肉。(外鍋)不加水,蓋上鍋蓋,按下開關先爆香。約4-5分鐘,開關即跳起。image步驟 3:接著加進白米(含浸泡的高湯)、[調味料]、珍珠干貝(含浸泡的白酒)。(外鍋)則倒進1米杯水量,蓋上鍋蓋進行烹煮。image步驟 4:開關跳起時,(內鍋)再加進大白蝦、透抽圈。(外鍋)再倒進1/4米杯水量進行烹煮。image步驟 5:開關再次跳起時,先取出大白蝦、透抽圈。再整鍋米飯翻拌均勻,並蓋上鍋蓋,續燜10分鐘使米飯更軟熟。image步驟 6:盛盤,加些現磨黑胡椒、巴西里。一道簡單好做,又營養好吃的海鮮薑黃飯就完成囉♪

    小撇步1.用的是量米杯,1米杯=180ml。2.如使用規格較小的白蝦,則可直接利用餘熱來燜熟,海鮮才不會過老。3.米飯已使用高湯烹煮,具鹹度,最後鹽巴調味須斟酌。
