中秋烤肉前先測風向!專家教你「3招防致癌煙霧」

周二(17日)就是中秋節,不少民眾計畫烤肉賞月。專家提醒,烤肉產生煙霧恐有致癌風險,若要烤肉,除選擇戶外通風場所,還要觀測風向,從側邊吹來的風才是最佳風向,因為可將煙霧吹開,若無明顯側風,可用小型電風扇替代,最佳方式則是選擇不用木炭的無煙烤盤。

今年中秋節雖然沒有連續假期,但不少民眾仍想揪親朋好友烤肉賞月。一般民眾常用木炭烤肉,但歐盟已證實,木炭烤肉因不完全燃燒,會產生致癌物多環芳香烴(PAHs),如何安心且健康烤肉,專家也提供小秘訣。

長榮大學職業暨環境與食品安全研究中心副教授張振平表示,木炭烤肉產生煙霧可能有致癌風險,所以民眾若要在烤肉,首先要選擇戶外通風處,接著觀測風向,側邊吹過來的風才是最佳風向,因為風會把煙霧掃開,讓人專心烤肉,從正面或背面吹過來的風,都會讓烤肉者吸到較多煙霧,進而危害健康。

若烤肉時風力太小或風力不明顯,張振平建議,可利用小型電風扇替代,讓電風扇帶來側風,將煙霧吹散,不然就是戴著口罩,或者根據風向隨時靈活變換位置,盡量吸入較少煙霧。

若民眾一定要烤肉,張振平建議,最佳方式是選擇不用木炭的無煙烤盤,這種無煙烤盤是用電,不用木炭,不會產生煙霧,影響相對較少。但無論用哪一種方式烤肉,建議民眾要記得要烤熟,也不要過量,蔬果也要吃,才能吃的更健康。
