端午節是華人三大節慶之一,除了立蛋、插艾草、划龍舟等傳統習俗外,最讓人期待的莫過於各式各樣的美味粽子。然而,粽子的高熱量常讓人又愛又怕。窩廚房特約營養師Sabbi指出,現代人往往只看熱量數字,卻忽略了食物的營養價值。因此,了解粽子的食材組成,並搭配熱量評估,才能做出更聰明的選擇。以下是四招聰明挑選健康粽子的秘訣,讓你在端午節既能享受美食,又能保持健康。

四招聰明挑選健康粽子

1. 挑選小尺寸,一次一顆沒負擔:小尺寸的粽子能有效控制單次攝取的熱量,減少身體負擔。市售粽子單顆重量約在150-180公克之間,熱量則落在450-600大卡不等,因此選擇小尺寸粽子是個不錯的選擇。

2. 挑選食材單純,避開高熱量餡料:傳統粽子常見的內餡如五花肉、鹹蛋黃,含有較高的飽和脂肪和膽固醇,容易對心血管造成負擔。Sabbi建議選擇以瘦肉、豆類、蔬菜為主的低熱量餡料,這樣可以減少不必要的脂肪攝取。

3. 挑選具高營養價值食材:選擇以五穀米、糙米等取代部分糯米的粽子,能增加膳食纖維及維生素的攝取,提升營養價值。這樣的選擇不僅能滿足口腹之慾,還能兼顧健康。

4. 蒸煮粽子優先:蒸煮能大幅降低粽子的油脂含量,減少額外熱量的攝取。避免油炸或過度烹調的方式,能讓粽子更健康。

粽子創意新吃法:讓端午節更有趣

除了單吃粽子,Sabbi與窩廚房聯手設計了粽子什錦燒,為傳統粽子增添新意。首先將粽子壓扁捏成厚圓餅狀,放入平底鍋,以乾鍋煎至雙面微焦,起鍋備用。接著將高麗菜、胡蘿蔔、洋蔥切絲,青蔥切段,雞蛋打散,加入麵粉與蛋液煎成蔬菜麵糊。最後將粽子餅、蔬菜餅,撒上海苔粉、美乃滋即可完成蔬菜加量的變形粽子。

如果吃膩了台式口味的粽子,也可以試試烘烤的泰國粽。以綠豆沙搭配豬絞肉為內餡的泰國粽,口感綿密豐富且富有層次。與傳統水煮粽不同的是,泰國粽採用烘烤的方式烹調,讓芭蕉葉的清香能更完整地融入內餡,增添一股獨特的焦香與深度風味。今年端午節,不妨試試這些創意吃法,讓過節更有趣。
