栗子香菇雞

#栗子香菇雞秋冬的時候傳統市場很容易可以買到栗子,把栗子入菜,增加口感跟價值感,這菜色當年菜也很合適!學會了,今年過年可以加菜囉~

食材

  • 去骨雞腿肉, 2片
  • 栗子, 約20顆
  • 乾香菇, 15朵
  • 蒜頭, 3小瓣
  • 蔥, 1支
  • 調味料
  • 醬油, 2大匙
  • 紹興酒, 2大匙
  • 糖, 1大匙
  • 香菇水, 250ml
  • 料理步驟image步驟 1:準備食材,去骨雞腿肉切小塊、乾香菇泡水軟化後切小塊、栗子可買市售去好殼(皮)的、花椰菜分小朵去粗纖維入滾水中燙熟備用、蒜頭去皮切片、蔥切花image步驟 2:準備一個有點高度的平底鍋,鍋裡不放油,雞腿肉雞皮朝鍋面,小火慢煎,煎出雞皮油脂後,才翻面,讓雞腿肉兩面煎至熟成。image步驟 3:下蒜片煎出香氣來,再下香菇、栗子拌炒一下image步驟 4:加入調味料,開中火進行燒煮image步驟 5:醬汁收稠加入蔥花,拌一拌就可以準備上桌囉。image步驟 6:年節時上桌,可以先鋪上燙熟的花椰菜,再盛上栗子香菇雞,這樣更有年味!

    小撇步1.乾香菇先沖洗一下再泡發,香菇水留著煮料理風味會更好2.傳統市場可以買到已去好殼(皮)的栗子3.喜歡栗子口感鬆軟一點,可以把栗子先蒸熟再放入燒煮
