火龍果不僅抗氧化!還降血脂、控血糖 醫師:整顆吃最健康

正值火龍果產季,台北榮總遺傳優生科主任張家銘醫師提醒,火龍果鮮豔的紅色果肉並非只是好看,其中含有名為「甜菜鹼色素」(betalains)的天然成分,具有強大的抗氧化能力,能幫助清除體內自由基,延緩老化、抗發炎、降血壓、降血脂,還能協助控制血糖,對血管、肝臟、大腦都有保護作用。

張家銘在臉書粉絲專頁基因醫師張家銘發文表示,甜菜鹼色素不只存在於火龍果,甜菜根、紅莧菜、紫藜麥與仙人掌果等食材中也都有。2024年刊登在《Foods》期刊的一篇國際大型綜論指出,紅色的「甜菜花青素」(betacyanins)與橘黃色的「甜菜黃素」(betaxanthins)皆具強大抗氧化能力,能幫助清除體內自由基,自由基會傷害細胞、加速老化、引發發炎,甚至與癌症及慢性病相關,因此「抗氧化」被視為保護身體健康的重要防線。

除了抗氧化,甜菜鹼色素也具有抗發炎、降血壓、降血脂的作用,還能協助控制血糖,對肝臟與大腦皆有保護效果。

張家銘建議,民眾在日常飲食中可多攝取紅色或紫色的天然食材,如紅龍果、甜菜、紅莧菜、紫高麗菜、紫地瓜或紫藜麥等,讓餐盤「繽紛一點」,就能獲得更多抗氧化的天然營養。不過,糖尿病或腎臟病患者應先諮詢醫師,並從少量開始嘗試,觀察身體反應。

張家銘提醒,火龍果最好整顆食用,不要榨成果汁;甜菜鹼為水溶性成分,但若只喝果汁不僅失去纖維,還會導致糖分快速進入血液,造成血糖與代謝大幅度波動;整顆吃不僅能保留纖維幫助消化,營養釋放也更穩定。此外,運動後若吃半顆火龍果或幾片烤甜菜,能幫助身體修復因運動產生的輕微發炎。
